Middle School Students Harvest, Donate Potatoes
Mrs. Shapiro and her Environmental Club members were very busy during Flex Time on a Thursday in October, weeding and harvesting the sweet potatoes that were planted last spring in their school garden.
Each student brought home several potatoes and stored them for a few weeks to allow the skins to toughen and the potatoes to cure, giving the sugar-producing enzymes time to kick in.
The rest of the sweet potatoes -- two large buckets and two baskets full -- were brought to the food pantry at St. Mary Magdalene Catholic Church on Sunday, November 10. They had been cured and scrubbed and were ready for the oven!
